For this video course (1 loaf and 1 boule, 700 g each) I used: 

  • 800 g (100%) of white all-purpose flour (type 00 if you can find it, if not T500 will do)
  • 520 g (65%) of room temperature water (or more if needed)
  • 16 g (2%) of salt
  • 160 g (20%) of bubbly and active levain

You can adjust the amount of flour and the rest of the ingredients to suit your needs. 🙂
