Around 6-8 hours before making your dough, do this: 🙂

Take a glass jar with a twist on lid and put in:

10 g of your starter,

80 g of white all-purpose flour,

and 70 g water.

Mix thoroughly and twist on the lid but don’t tighten it all the way.

Leave the jar at room temperature.

When the levain doubles in size, continue watching the video to begin making the dough.
