BONUS: STRETCH AND FOLDS
In the next 2 hours, if you take time, you can do 4 series of stretches and folds every 30 minutes.
- Pick the dough, pull it up and fold toward you.
By doing this, you’ll additionally strengthen the dough.
If you moisten your hands, the dough won’t stick to your skin.
The dough feels nice.
- Then you can round the dough by pressing it towards the edges while rotating the bowl.
- Cover and leave to double by 50 percent at room temperature.
