6. 3. Psyllium as a binder

Use psyllium husks, they act as a binder. However, don’t leave it to soak for too long, 10-15 minutes maximum. 

If there’s too much psyllium, the dough can’t rise well.

An optimum amount is between 5-7 percent based on the total flour amount.
